Restaurant owners often ask why vegetable rates change every day when packaged goods stay stable for months. The answer is that fresh produce is an auction, not a price list.
Supply decides the morning
Each night, trucks arrive from farms across Gujarat, Maharashtra, and beyond. More trucks means softer prices. Rain in the growing belt, a festival week, or a transport strike can cut arrivals and push rates up within a single day.
Quality is priced in layers
The same vegetable sells at three or four price levels in the same mandi on the same morning. Top-grade lots go first and cost more. When someone quotes you a surprisingly low rate, ask which grade it belongs to.
What a fair supplier does
A fair supplier quotes with the market, up and down, and tells you which grade you are getting. Consistency of grade matters more to your kitchen than winning a rupee on a bad crate. That is the trade we stand by every morning.
